A Ichemy, the process by which base materials are turned to gold ,is made a little easier when your principal ingredient already contains that precious metal.Such is the case with the water of the Pitilie Burn that runs outside the town of Aberfeldy.
It first collects in the pool of the Water Gods, one of the few places in Scotland where people still come today to pan for gold. The water is then freshened up by a brisk passage over the Falls of Moness,a local beauty spot.
After this it burbles merrily on through woodland known as the Birks of Aberfeldy, made famous by Robert Burn's poem of thatname, and dotted in summer with wild flowers;red campion, yellow pimpernel, bugle and sweet woodruff.
At the end of its journey the water is mixed with malted barley, distilled and then laid to rest in oak casks until it finally reaches its golden destiny as fine, mellow, honeyed Aberfeldy malt whisky.
Nose: Runny honey, dried fruits and biscuity malt enlivened by a fresh, zesty quality and notes od waxed citrus.
Palate: Silky vanilla and creamy oak lead to refined smoke, with notes of marzipan, candied orange and floral fruit.
Finish : Rope white peach, sultanas and a good e of honey a smidge of wood smoke, backed up by caramelised almonds and a touch of toasted coconut.
