Kilchoman Distillery sits amongst the traditional building of Rockside From on the north-west coast of Islay.Sheltered beneath the Cnoc Dubh headland,our barley fields stretch west to the shores of Machir bay ,Established in 2005,the family run distillery was the first to be built on islay in over 124 years.
From our inception,the 100% Islay range,islay's only Single Farm Single Malt,was our reason for being it represents the rebirth of farm distilling,where the responsibility for growing and malting barley,the foundation of single malt,is not outsourced but completed on site with skill,care and attention to detail.
The 100% Islay 12th Edition was distilled from our 2011,2012,2013 barley harvest before being matured for a minimum of 8 years in 29 bourbon barrels and 6 oloroso sherry butts.The combination of lightly peated barley matured in both bourbon and sherry casks creates an intense balance of floral sweetness,layers of rich fruity character and soft maritime peat smoke.
Nose: Banana fritters with floral notes developing underneath. Toasted sugar and a hint of malty chocolate.
Palate: Honey'd and sweet at first, though notes of smoked barley blossoms soon after. A kick of cooking spice on the mid-palate.
Finish: Drying cacao joined by salted butter melting on crumpets.
