Founded by renowned bartender Yuki Yamazaki, The Japanese Bitters are the first bitters made with natural Japanese ingredients, and using a host of different techniques, including vacuum distillation. Yuzu is a citrus fruit native to Japanese, a cross between a mandarin and ichang papeda. The flavour has hints of the all the common citrus fruits ; lemon, lime, orange and grapefruit. This costs a pretty penny, so use it sparingly with ales and sour cocktials.
