Our distillery is nestled in the famous Black Isle.It's a landscape legendary for its luscious and abundant barley.
Although home-malting is a very rare pratice nowadays,we insist on lovingly malting the barley ourselves.We do it to ensure that the naturally fragrant flavours of the grain fully develops before we ferment it for a day more than most distilleries.
These elegant flavours have been enhanced by resting this award-winning Single Malt for a minimum of 15 years in both refill ex-sherry casks and refill ex-bourbon casks,known for amplifying the sumptuously smooth vanilla notes of a whisky.Enjoyed summer citrus fruit,aromatic ginger,sweet rose and warming cinnamon all dancing across the tongue.
Nose: Rich vanilla, cinnamon and clove spice, and some baked apple.
Palate: Silky caramel, toasted oak, spiced fruit compote, with dried apricot.
Finish: Drying oak and vanilla.
